The New Food Magazine – out now!January 8, 2014 by The Co-op Observer
Ever since The Co-operative started to publish the Food Magazine it has been eagerly anticipated in our household. Friends who come around often pick it up too, then they start shopping at their local store and then they say how much theyâ€™re loving The Co-operativeâ€™s food. Werenâ€™t they listening all those times when I told them to go there?
Although weâ€™re still enjoying Christmas fare (we have one of the amazing jewelled chocolate fruit and nut bars for dessert tonight), Iâ€™m looking forward to creating some wholesome dinners through the cold months of January and February.
The main attraction tonight will be the hearty red wine chicken casserole â€“ the recipe is on page 33 (or page 18 online) of the new magazine. Weâ€™re into our seasonal vegetables too and tonight Iâ€™m thinking of sweating some finely sliced leeks before stir frying them with coarse shredded savoy cabbage, garlic and then throwing in some toasted pine kernels just before everything is ready to serve. Itâ€™s an effective way of getting the youngsters to tuck into their greens.
On pages 8 and 9 (page 5 online) of the new magazine thereâ€™s a section on whatâ€™s in season now â€“ Iâ€™ll be trying the roasted root vegetables with parmesan soon. Roasted vegetables are the way forward through winter! The caramelized, chewy, slightly sweet veg will be complimented well by the parmesan which should be just at the point of getting burnt and give a lovely crunch to the outside. Try the recipe with a teaspoon of cumin at some stage instead of the herbs, itâ€™s just as nice, though quite different.
Elsewhere thereâ€™s the usual meet the producer article. I say usual, although each time you learn something completely different from it. This time it is a chocolatier, John Grimshaw, talking about his delicious products, which includes unique chocolate hearts for Valentines.
Valentines chocolates? Already? Well yes, I guess itâ€™s only a few weeks away.
I have only flicked through my advance copy of the magazine so far, but Iâ€™ll be back with more updates as I try the recipes.
