Weâ€™re coming up to one of the favourite times for anyone who likes their days off â€“ from Easter through to the end of May we have four bank holidays. It makes the working months just fly by having those extra days off.
18th April is Good Friday.
21st April is Easter Monday.
5th May is the Early May Bank Holiday, once known as Labour Day.
26th May is the Spring Bank Holiday a day you may hear referred to as Whitsun Holiday, although Whitsun is actually the seventh Sunday after Easter, the 8th of June this year.
The time around Easter is an important part of the religious calendar for both Christians and Jews. The Christians commemorate Christâ€™s crucifixion on Good Friday, and then celebrate his resurrection on Easter Monday. The Jewish Feast of the Passover is at a similar time, starting on the 15th April this year.
Any bank holiday is a great opportunity to get together with friends and family whether thatâ€™s at home or perhaps taking a self-catering holiday at the seaside. And when there are a few of you together itâ€™s always good to know that there are some excellent food deals at the Co-operative.
We love a roast dinner! So Iâ€™m delighted to see that there are roast dinner deals on lamb, beef and pork.
The large beef roasting joint is quite excellent, lean meat that just falls apart if slow cooked. In the new Food Magazine youâ€™ll find Amanda Grantâ€™s recipe for beef with seasonal vegetables and gravy, and thatâ€™s particularly good accompanied by her spring greens with horseradish.
The beef is particularly good slow roasted. On Sunday six of us had a fantastic supper that I prepared in the morning and left in the slow cooker all day. All I did was to seal the beef joint, soften a large, coarsely cut onion, then pop it in the pot with a hand full of carrots, a (very) generous grinding of black pepper, half a bottle of red wine and enough stock to cover the joint. A couple of hours before serving I added several roughly cut potatoes that helped thicken the gravy.
A couple of tablespoons of a soup mix of lentils and grains is an excellent way of making the meal go further and thickening it too.
The beef joints are half price from 9th â€“ 22nd April at just Â£6 per kilo.
Thereâ€™s a whole leg of lamb at just Â£6.24 per kilo, and again this lends itself to the convenience of slow cooking, great with a bunch of rosemary, garlic, onion, some wine for juice and not much else. Seal the pot well with foil and leave it roasting for a few hours â€“ wonderful.
When it comes to roasting pork, getting great crackling is the most exciting part. A bigger joint makes this easier as youâ€™ll need to leave it in the oven longer. Youâ€™ll need to dry the joint before cooking as any moisture will lessen the crackle. Be sure to score the rind all over using a sharp knife, and then rub in salt and a good grinding of pepper. Roast pork is perfectly accompanied by an apple sauce, and gravy.
