A few favourite recipes from the new Food MagazineJanuary 28, 2014 by The Co-op Observer
I donâ€™t manage to cook everything that appears in the Food Magazine, but I do try as many things as possible.
What I particularly like are simple recipes, with just a few ingredients, that I can pull together in a short time after work before all the family start reminding me how hungry they are.
We have several weeks left with this lovely magazine, but a few things are already written up on the family menu blackboard in the kitchen to be repeated.
Here are three meals that we have enjoyed so far:
Pasta Norma: I admit I was attracted to this recipe by its funny name, but when I looked it up I learnt that itâ€™s named after an Italian opera with a lovely aria called Casta Diva. Itâ€™s a simple pasta dish of aubergine, tomato, chilli and garlic â€“ thatâ€™s enough to make something wonderful already. Whatâ€™s better is that you donâ€™t have to go to the trouble of salting the aubergine, yet you still get its interesting smoky flavour. How easy? Very Iâ€™d say.
Spicy pork lettuce cups: Now while Norma attracted me with its name, this name doesnâ€™t do the tasty dish justice. There are a few more ingredients to consider, but itâ€™s worth the effort and if you serve these as hors dâ€™oeuvres your family and guests are sure to be impressed. Itâ€™s Chinese New Year on Friday â€“ go on, give it a go.
Vietnamese style beef noodle soup: We were lucky to live in the East End of London as some of its areas were becoming popular with the Vietnamese, such as Hackneyâ€™s Kingsland Road. We ate wonderfully well there and cheaply too. This dish is known as a pho and is simple to make, yet rewarding to eat. The only unusual ingredients such as fish sauce and hoisin sauce are used in many Asian dishes, so they wonâ€™t go to waste.
Next up I want to try the two ways with three ingredients â€“ salmon, crĂ¨me fraĂ®che and spinach. Spinach is hugely popular in our household, and the perfect vegetable to accompany salmon.
