A few favourite recipes from the new Food Magazine

I don’t manage to cook everything that appears in the Food Magazine, but I do try as many things as possible.

What I particularly like are simple recipes, with just a few ingredients, that I can pull together in a short time after work before all the family start reminding me how hungry they are.

We have several weeks left with this lovely magazine, but a few things are already written up on the family menu blackboard in the kitchen to be repeated.

Here are three meals that we have enjoyed so far:

Pasta Norma: I admit I was attracted to this recipe by its funny name, but when I looked it up I learnt that it’s named after an Italian opera with a lovely aria called Casta Diva. It’s a simple pasta dish of aubergine, tomato, chilli and garlic – that’s enough to make something wonderful already. What’s better is that you don’t have to go to the trouble of salting the aubergine, yet you still get its interesting smoky flavour. How easy? Very I’d say.

Spicy pork lettuce cups: Now while Norma attracted me with its name, this name doesn’t do the tasty dish justice. There are a few more ingredients to consider, but it’s worth the effort and if you serve these as hors d’oeuvres your family and guests are sure to be impressed. It’s Chinese New Year on Friday – go on, give it a go.

Vietnamese style beef noodle soup: We were lucky to live in the East End of London as some of its areas were becoming popular with the Vietnamese, such as Hackney’s Kingsland Road. We ate wonderfully well there and cheaply too. This dish is known as a pho and is simple to make, yet rewarding to eat. The only unusual ingredients such as fish sauce and hoisin sauce are used in many Asian dishes, so they won’t go to waste.

Next up I want to try the two ways with three ingredients – salmon, crème fraîche and spinach. Spinach is hugely popular in our household, and the perfect vegetable to accompany salmon.
